Turkey Day Review

Ham, mashed potatoes, bacon & leek dressing.  Cherry/Orange scones with whipped cream.  A cat that meows so much it must be using the sound as sonar.  Two dogs that don’t know how to sleep without people under them.  One boy who got to put up ornaments and didn’t break any.  One hot woman who gave me a new fuzzy robe to stay warm. High temperatures of 40 degrees.

And now, finally, three days late, Alice’s Restaurant Massacree.

sooo much envy here....we were lucky to have turkey and stuffing here.

Mom decided to have a passive agressive fit and didn't do any of the cooking like she said she was going to. I feel worse for the kids. I would have cooked, but I'm working night shifts now. I barely got any sleep because I was trying to keep her from taking her anger with me (about moving or whatever) out on the kids.

Turkey day with no turkey. Can't say I have had ham for Thanksgiving before (usually my parents have one for Easter). I had turkey with the in-laws but when I met my parents at the restaurant I had salmon and crab. :)

Bacon and leek dressing? Did you make that or did Kat (I think that's her name, I hope that's her name)? Could I maybe get the recipe? I'll google it as soon as I post this, but I've never heard of it before. And I thought know how to make everything there is with BACON.

It was meant to be bacon and apple dressing, but my dried apples were so old they'd become candy and I forgot to pick up an apple in the store, so I modified it. And, Kat "made" the ham - precooked, honeybaked. hehe

Let's see...
Preheat oven to 375.

Rehydrate a half cup of dried mushrooms (I used shitakes), reserving the juice for later use.
8 cups of dried bread cubes (I just buy a pre-dried bag)
1.5 cups of leeks
.5 cup shallots
2 cups celery
Saute leeks, shallots, and celery in 2 tbsp of butter until slightly softened, but a little crunchy yet.

Fry up a half pound or so of bacon. You can use up to a pound, but you'll be very bacony then.

Chop the rehydrated mushrooms into small pieces.

Chop 1/2 cup of fresh parsley, 3 tbsp of fresh sage, and 2 tbsp of fresh thyme.

Mix all the ingredients thus far in a very large bowl. 3 quarts was not nearly large enough.

Moisten mixture with the reserved mushroom juice (up to 1 cup), 1/2 cup of white wine, and a can or so of chicken broth. The cubes should not be dry, all the liquid should be absorbed. If needed, use more broth.

Beat 2 eggs, and add to the stuffing, mixing well.

Bake in 13x9 greased pan for 30 minutes, covered in foil. Remove foil, cook additional 20-30 minutes until lightly browned.

I made a similar dressing last year, with apples and without shallots. Very yummy. I happened to have some shallots lying around this year. :-)
